Spring Salad

It’s made with whatever just popped up at the corner grocer. Must have buttermilk dressing.

  • Fennel
  • Radish
  • Arugula
  • Avocado
  • Grapefruit
  • Dill
  • Almonds or walnuts (toasted if you got ’em)

Dressing:

  • 2 tbsp Buttermilk
  • 1 1/2 tbsp Apple Cider vinegar
  • 1 1/2 tbsp honey
  • dollop olive oil
  • S & P

Cube the avocado and grapefruit. Slice the fennel and radish nice and thin so their flavours can be better distributed. Knife skills help.

For the dressing, blend all ingredients except for the oil, and that last and blend one more time.

If you want to crisp up your raw almonds, heat 1 tsp of olive oil on high heat, toss in raw nuts with a healthy dash of salt,, and toss intermittently for about 5 mins.

Combine all fruits and veggies with nuts. Dizzle on dressing and toss lightly but evenly.
